Is vaping harsher on the throat because you have to pull harder than with a joint, or is it something else about the vapour itself?

Dunno mate it's not harsher for me, especially if I use a bubbler or marbles.

How hot are you vaping and through what machine / setup?

I’m using the wolkenkraft fx mini, and I’m still playing with temps, but I find I only get benefits from the hotter temps of maxing out at 220*c

Woof, yeah that is going to be rough on the throat.
So if you want to enter in at that temp straight away, someone recommended a bubbler - that's a good shout. There's all sorts of set-ups you can put together, either just an attachment right on the machine, or tubes, glassware, bowls, globes, loads.
Another option which might be cheaper, or at least worth ruling out first before you create a mini lab, is to start the session at a much lower temp and work upwards (I start at 170 or 185 depending on time of day). Of course it may not give you the effects you need, but it might work in that, because you've essentially expelled some of the vapour / cannabinoids / terpenes / etc at a lower temp. it's not so harsh when you get to the higher temp
