Cheese seemed to be everywhere in the mid-2000s. Haven't had it in years at this point.

There doesn't seem to be any medical cheese strains that I've happened upon so far, is that correct? Is there a reason?

I do remember seeing it would be more prominent on medical this year and I got the impression it did not just mean the carts .
Saying that there's cheese and there is strains called cheese.

ECS - Cheese Leche is available also there are some strains with cheese a generation or two remved in the genetics.

I'd recommend a site like seedfinder, search cheese, then click the link from there to strains that contain cheese and see if there are any Hybrids that may work for you?

Now can I get to taking things off topic and say they have wonderful auctions in dam where you can buy wheels of some of the finest cheese known to man
